Irish coffee has humble beginnings rooted in hospitality and innovation. The story begins in the 1940s at Foynes, an airbase in County Limerick, Ireland. Chef Joe Sheridan created the drink to warm up weary passengers arriving on transatlantic flights. When asked if the coffee served to passengers was Brazilian, Sheridan famously replied, “No, it’s Irish coffee.”
Sheridan’s creation combined freshly brewed coffee, Irish whiskey, brown sugar, and a layer of cream floated on top. This innovative concoction quickly gained popularity for its ability to soothe and invigorate. The cream, carefully poured to float, allowed the drinker to sip the hot coffee through the cool, rich layer, creating a delightful contrast in every sip.
The drink’s international rise to fame began in the 1950s when travel writer Stanton Delaplane encountered it during a visit to Ireland. He brought the recipe back to the United States, introducing it to the Buena Vista Café in San Francisco.
After much trial and error, the Buena Vista perfected the method of making Irish coffee, and it became a staple of their menu. Their dedication to authenticity—using real Irish whiskey and floating the cream perfectly—set a standard that bars around the world would emulate. Today, the Buena Vista serves hundreds of Irish coffees daily, cementing its place in cocktail history.
